A Vanilla mille crepe cake is a combination of thin French crepes, vanilla pastry cream, whipped cream and an optional flavour that’s to die for!

Crepe Batter

The best crepe in the world is as French as the marinere stripes that adorn the classically styled Claudette. Based on this, First Love gather the mille crepe recipe from France with consisting of bunch of layers (20+) of paper thin crepes, each separated with a brush of cream from Japan’s recipe. Mille crepe cakes have a denser texture due to the layers of cream filling in between the crepes. Ingredients for the crape batter: flour, eggs, milk, sugar, water, vanilla and melted butter. The layered crepes make a soft and tender cake that is made light and creamy from the whipped cream, with some crunch and bite from the granulated sugar and bruleed top.

Pastry Cream

Classic French mille crepe, consists of many layers of French crepes and pastry cream. Pastry cream with fold in whipped cream, this create a lighter, creamier and firmer cream to hold the layers and better mouth feel as well. Mille Crepe is best made a day ahead of time and refrigerated before serving it as allows the texture of the cream to firm up. This melt in your mouth mille crepe is definitely worth the time and patience to dry!

The best quality vanilla beans regardless of where they are coming from, are dark skinned, soft and pliable. They should have a rich aroma. You should avoid beans with very little scent and beans which are smoky, brittle, dry or mildewed.
